Barley (known as Yava in both Vedic and classic Sanskrit) is mentioned many times in Rigveda and other Indian scriptures as one of the principal grains in ancient India.Barley is a member of the grass family and is a cereal. This grain is extremely versatile with its rich nut-like flavour and an appealing,chewy consistency. Barley is considered to be an excellent source of dietary fibre and of minerals like selenim,phosphorus,copper and magnesium. Regular consumption of barley is supposed to provide a host of health benefits such as helping lower cholestrol,regulate blood pressure and support internal health and digestion. Whole barley can be used as a base for soups and salads.
